The traditional lime and salt ritual actually originated as a way to mask the harsh taste of low-quality tequila in the early 1900s. Premium tequila is meant to be sipped neat to appreciate its complex agave flavors, but the shot tradition stuck because it's way more fun to lick salt off your hand.

Born in the agave fields of Jalisco, Mexico, where indigenous peoples fermented agave for centuries before Spanish conquistadors introduced distillation. The shot format became popular when American college students discovered tequila during spring break trips and needed the fastest possible delivery method.

Ingredients

• 1.5 oz silver tequila (blanco tequila works best for shots)
• 1 pinch coarse sea salt
• 1 wedge fresh lime (cut into quarters)

Instructions

1. Pour tequila into shot glass and chill in freezer for 10 minutes if desired.
2. Lick the skin between your thumb and index finger, sprinkle salt on the wet spot.
3. Hold lime wedge in the same hand as the salt, shot glass in the other.
4. Lick salt, shoot tequila in one gulp, immediately bite lime wedge.
