The Collins family of cocktails was so popular in the 1870s that bartenders created a practical joke called 'Tom Collins hoax' where people would tell friends that someone named Tom Collins was talking badly about them at a nearby bar, sending them on wild goose chases.

Born as a fruity variation of the classic Tom Collins in American cocktail bars during the craft cocktail renaissance of the 1990s. Bartenders began experimenting with seasonal fruit additions to classic templates, and raspberry became a standout for its color and flavor balance.

Ingredients

• 2 oz gin
• 1 oz fresh lemon juice
• 0.5 oz raspberry syrup (or muddle 6 fresh raspberries with 0.5 oz simple syrup)
• 4 oz club soda
• 6 whole fresh raspberries (for garnish)
• 1 wheel lemon (for garnish)

Instructions

1. Fill collins glass with ice cubes.
2. Add gin, lemon juice, and raspberry syrup to glass.
3. Stir gently to combine.
4. Top with club soda and stir once more.
