Limoncello was traditionally made by Italian fishermen who would drink it at dawn to warm up before heading out to sea. The Amalfi Coast still produces 80% of the world's limoncello using Sfusato lemons that are hand-picked at night when their oils are most concentrated.

Born in early 2000s Italian beach clubs when bartenders started lengthening traditional limoncello with Prosecco and soda. What started as a way to make the potent liqueur more refreshing quickly became the unofficial drink of Italian summer.
