The Clover Club cocktail was named after a Philadelphia men's club that met at the Bellevue-Stratford Hotel from 1882 to 1920. Ironically, this pink, 'feminine' drink was originally sipped exclusively by powerful businessmen and politicians who would never have let women through their doors.

Born in the 1880s at Philadelphia's elite Clover Club, where captains of industry gathered monthly to drink, dine, and make deals. This pink beauty was their signature tipple until Prohibition crashed the party in 1920.

Ingredients

• 2 oz gin (London Dry works best)
• 0.5 oz dry vermouth
• 0.5 oz lemon juice (freshly squeezed)
• 0.5 oz raspberry syrup (homemade preferred)
• 1 whole egg white (fresh, not pasteurized)

Instructions

1. Add all ingredients to cocktail shaker without ice and dry shake vigorously for 15 seconds.
2. Add ice and shake again vigorously for another 15 seconds.
3. Double strain through fine mesh strainer into chilled coupe glass.
4. Garnish with lemon twist or fresh raspberry on rim.
