Created in the late 1700s as a medicinal elixir, absinthe became the drink of choice for Parisian artists and writers by the 1800s. The ritualistic preparation method developed in French cafés, where elaborate fountains slowly dripped ice water over sugar cubes.

Instructions

  1. Pour absinthe into absinthe glass
  2. Place absinthe spoon across rim of glass and sugar cube on spoon
  3. Slowly drip ice water over sugar cube until it dissolves completely
  4. Continue adding water until drink turns milky white and reaches 3:1 or 5:1 water to absinthe ratio
  5. Remove spoon and stir gently before serving
